To build this bin, choose a wide-mouth half-gallon or one-gallon Mason jar. The wide opening makes it easy to scrape cutting boards directly into the jar. Modify the two-piece metal lid by using a hammer and a small nail to punch several small holes into the flat metal disc. To prevent small pests like fruit flies from entering, cut a small circle of fine mesh screen or breathable cotton fabric and place it directly underneath the perforated metal disc before screwing on the outer ring. Empty this container every two to three days to maintain optimal freshness.
